It took me a while to get used to the idea of fennel, as a child I used to love eating those old fashion aniseed balls by the brown paper bag full. I’m not sure what happened, perhaps I I overdid it somewhere along the line, drank too much Sambuca maybe 🤦🏼♀️, but throughout my twenties I really struggled with anything vaguely aniseed flavoured.
Now I’m a proper grown up I have re-trained my palette. I remember tasting raw fennel for the first time as a 28yr old @fishworksuk in Bristol, it was sliced thinly in a simple dressed salad, the flavour was incredible, not too strong, just sweet & delicate, from here my love of fennel was born.
Fennel and pork are great friends, I love a fennel salami or a sprinkling of fennel seeds on top of a home made sausage roll, so when I discovered this Rigatoni with Fennel and Sausage dish from @angelacooking in the @obsfood i knew i was onto a winner.
The fennel flavour is subtle, a perfect introduction for young palettes. The recipe is extremely quick and simple, delicious and comforting, the perfect mid-week post swimming family dinner fix.
